creamy potato soup

What do you need:

  • 2 1/2 pounds potatoes, peeled and cut into small pieces

  • 1/2 kilo bacon cut into cubes

  • 1 medium carrot, grated

  • 1 medium onion, chopped

  • 1 can of evaporated milk

  • 2 chicken stock cubes

  • 6 cups of water

  • 3 tablespoons of butter

  • 4 teaspoons chopped parsley

  • 2 teaspoons Worcestershire sauce

  • 1 teaspoon ground nutmeg

  • 1 teaspoon ground mustard

  • 1 teaspoon salt

  • 1/2 teaspoon red cayenne pepper

Heat a large pot over a campfire, then cook the bacon in the butter until tender. Set aside. Cook the onions in the bacon fat until just tender, then set aside with the bacon. To 6 cups of water in the pot, add the potatoes and chicken bouillon cubes. Bring the mixture to a boil, and then simmer until the potato pieces are tender, about 15 to 20 minutes.

Add carrots and cook until tender. Add the evaporated milk, parsley, Worcestershire sauce, nutmeg, mustard, salt, and pepper. Finally, return the bacon and onions to the pot and heat an additional 10 minutes before removing from heat.

6 Can Campfire Soup

What do you need:

  • 1 can of meaty chili

  • 1 can of diced tomatoes

  • 1 can of mixed tomatoes and green chili

  • 1 can of red beans

  • 1 can of pinto beans

  • 1 can of corn

  • 1 cup processed cheese

  • Salt and ground black pepper to taste

Combine beefy chile, diced tomatoes, tomato-green chile mix, kidney beans, pinto beans, and corn in a large pot. Stir and cook over a campfire and bring to a boil. Allow to simmer for 15-20 minutes to blend the flavors. While the soup simmers, dice the processed cheese. Stir the cheese into the pot and stir until melted and combined with the soup. Spice with salt and pepper. Take off the fire and serve immediately!
