Bread is one of the most widely consumed forms of food around the world and banana bread is one of the most famous varieties. Banana bread, as the word implies, has bananas in it. It is usually moist, sweet, and has a cake-like texture. It is considered a quick bread because it is quick and easy to prepare, just combine all the ingredients, mix them and Viola! it is ready to be baked. No one really knows where banana bread originated or who invented it, but people speculate that it was created in the 18th century by housewives who were trying out different uses for pearl. During the 1960s, when home baking was revived, banana bread suddenly became very popular. It was featured in almost every cookbook due to its simplicity in preparation; it can even be baked or cooked in a Zojirushi bread machine!

Here is a simple banana bread recipe that anyone can enjoy.

Ingredients:

1 3/4 cups all-purpose flour
¾ cup sugar (white)
1 teaspoon baking powder
¼ teaspoon bicarbonate of soda
¼ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
½ cup melted butter
3 large bananas, mashed very well
1 teaspoon vanilla extract

Process:

The oven should be preheated to 350 degrees Fahrenheit or approximately 180 degrees Celsius. Lightly butter and flour a baking dish and set aside. Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl and set aside. These will be the dry ingredients.

In a separate bowl, mix together the melted butter, mashed bananas, eggs, and vanilla. Using a rubber spatula or wooden spoon, lightly mix this mixture into the dry ingredients. Fold until the combined batter is thick. Do not over mix as this will result in a hard and chewy bread. Pour the mixture into the baking dish and bake until the bread is golden. To make sure the bread is cooked, poke it with a toothpick and if it comes out clean, the bread is ready. Let the bread cool for a while and then remove it from the pan. Serve while hot to enjoy all the freshness of the bread, or if you intend to eat it later, freeze the bread. This recipe can make a 9 x 5 x 3-inch loaf.
